Frittata

Not that long ago I didn't even know what a frittata was. After reading this - you might think I still don't know what a frittata really is.

Ingredients:

1 lb. ground turkey

2 onions, chopped

1 head of garlic

1 dozen eggs

1 dozen chili peppers (I used a variety based on what I had)

1 can of Rotel with habanero (10 oz)

Cilantro, chopped

1/2 can coconut milk

Carrots

  • One teaspoon of:

  • Cayenne Pepper

  • Ghost Pepper Salt

  • Ancho Chili Powder

  • Cumin

  • Turmeric

  • 1/2 teaspoon of:

  • Coriander

  • Cinnamon

  • 1/4 teaspoon of:

  • Nutmeg

  • Cloves

Directions:

Pre-heat the oven to 350.

Brown the ground turkey and add spices. When turkey is done, drain and set aside.

Process the Rotel and garlic cloves in the food processor.

Chop up the peppers, onions, carrots and cilantro.

Add all the ingredients to an oven dish and bake for 45-60 minutes. I use the toothpick method to see if it's done.

I bet some cheese would be awesome in this but I'm limiting dairy. I re-heat it for breakfast and add some hot sauce.
