Egg BOAT Salad

This is quite a departure from my usual creations but it is still really good.

You will need:

2-3 beets, diced

3 turnips, diced

2 granny smith apples, diced

1 onion, diced

6 hard boiled eggs, chopped

8 tablespoons of homemade mayo

Pecans - I never measure this, maybe 1/4-1/2 cup?

Parsley flakes - I never measure this, maybe 1/4 cup?

Put everything in a bowl and mix - you're done! It's great on its own or with some licorice sausage.
